COZZE Rotate 13" Black Edition pizza hőmérséklet és sütési idő
A Pandough becslése szerint a nápolyi kiindulópont 60% hidratáltságnál: 455 °C-os levegő, 455 °C-os sütőfelület és körülbelül 65-95 sec. Ezek a modell becslései ehhez a kemencéhez, nem a gyártói specifikációk.
Black Edition rebuilds the 13-inch Rotate around a double-layer body, an SS409 inner shell inside a black-coated outer, and lifts the rating to 630 C, the highest figure Cozze publishes. The insulation is the real change: it holds deck heat far better than the single-skin bodies that reviewers criticise in wind.
- 630 C is the highest rating Cozze publishes, and the twin-skin body is the reason it can hold it
- Double-layer construction directly targets the wind sensitivity that Danish testers criticise on the single-wall Classic models
- An SS409 U-burner and a rotating stone in a 50 x 50 cm footprint make this the most capable genuinely small Cozze
- Biscotto replacement stones are stocked for the 13 Rotate, which is the standard fix for the stock deck at these temperatures
- At 630 C the stock 1 cm cordierite will burn a base long before the top is ready. Plan the biscotto swap as a fix, not an upgrade
- New for 2026, so there is no multi-season durability record yet, and earlier Cozze bodies were criticised for soft powder coating
- It is still a 34 cm deck, so the chamber stays tight to launch into, rotation or not
- Premium Rotate money for a 13-inch pizza
- The stock 1 cm cordierite scorches at the temperatures this oven is built for. Treat biscotto as the fix, not an upgrade.
- If the base catches before the top is done, drop the flame or swap to biscotto. The stock stone is the usual culprit.
- The chamber is tight. Learn a clean launch and a quick turn before you chase 90-second bakes.
