Glowen Dragon 17" pizza temperature and bake time
For a Neapolitan pizza at 60% hydration, start at 455°C air temperature, 455°C on the baking surface, and about 65-95 sec. Adjust the Oven Lab for your dough.
Glowen Dragon 17" is a Portable gas oven, reaching up to 480°C, outdoor, powered by gas, weighing 19.5kg, fitting 1 pizzas, and heating up in 18 minutes. The larger gas Dragon — same portable, piezo-ignited design as the 14" but with a wider deck that takes a pizza up to ~43 cm, on a thicker 25 mm chamotte stone. Up to 480 C with "Rolling Flame" top heat and a clean dual-airflow burner; bakes in 60-90 seconds. Regulator is country-specific and not included. Pros: fits a larger ~43 cm pizza than the 14" model, thicker 25 mm chamotte stone for steadier deck heat, still light at 19.5 kg and gas-quick (~18 min), piezo ignition, clean low-soot burner. Users of this oven often complain about single pizza at a time despite the bigger deck, gas only; no wood option, regulator/hose not included and region-specific.
- Give the deck the full 18 min. Air temperature lies. The stone is slower.
- Turn every 20-30 seconds. A side flame will scorch the rim if the pie sits still.
- Wind at the mouth dumps heat. Face the opening away from the breeze or the stone never saturates.
