ChatGPT is the best baking teacher most of us have ever had. Describe a crumb and you get a real explanation. Ask why a dough tore and it asks a follow-up first. That is language work, and it is extraordinary at it.

It should not be picking your yeast. An unaided LLM, ChatGPT or otherwise, writes a schedule and a dose that may or may not work. There is no curve underneath. The same question in a new session gets a new number. Connect the same assistant to Pandough through MCP and it stops inventing. It calls the engine and reports the result. That pairing dwarfs a phone calculator.

Unaided ChatGPT vs the Pandough engine

Seven schedules, three fresh ChatGPT sessions, fresh yeast in grams. Same baseline as the other comparisons: 4 x 250 g, 60% hydration, 2.5% salt. Run 3 printed 9.2 g at 8 h 22°C and 14.8 g at 8 h 26°C. Those two sit off this chart.

The same assistant, with Pandough MCP

Same seven questions, Petra 5037. MCP tracks the engine within 0.03 g on the five August schedules. 8 h at 26°C and 48 h at 18°C are later engine runs. The 48 h MCP point is not that schedule. plan_bake auto-split it.

When the assistant alone is the right call

Choose the unaided assistant when the job is language. You are troubleshooting a bake that already happened. You want to know what a term means, or why a technique exists, or how to adapt a wood-oven method to a home oven. Ask it. For that class of question it has no real competition.

Do not ask it for grams. The chart above is what grams look like when nothing is holding them in order.

When ChatGPT plus MCP is the right call

Choose the connected assistant when you want to plan a dough in conversation. You keep the teacher. The arithmetic is a tool call. Same questions, same model, numbers that sit on the engine line.

That is the setup I would actually recommend to anyone who likes working in a chat window. It is also a different class of tool from PizzApp or the Ooni calculator. Those give you a number. This gives you a number you can interrogate.

Connect it at /connect.

When you still want the app

The connector will not show you the schedule as a graph. It will not talk to a temperature sensor. It will not push you when the dough is due.

Open the PWA when you want to see where the ferment will land, when you want a sensor on the dough, or when someone else is expecting pizza at a time that cannot slip. The assistant can plan the bake. The app is what holds it while you are not looking.

Frequently asked questions

Can ChatGPT calculate pizza dough yeast on its own?

Not reliably. Three fresh sessions on the same seven schedules disagreed with each other, and all three increased the yeast as the kitchen warmed from 22 C to 26 C. Warmer dough needs less yeast, not more. The assistant is writing a plausible number, not computing one.

What happens when ChatGPT is connected to Pandough?

It stops composing the dose. With the MCP server attached it calls the engine and reports the result. On Petra 5037 the MCP numbers sit on the engine line within 0.03 g. That pairing is a different class of tool from a phone calculator.

Do I still need the Pandough app if I use ChatGPT with MCP?

For the number, no. Open the app when you want to see the schedule as a graph, attach a temperature sensor, or get a push notification when the dough is due. The assistant can plan. It cannot tap you on the shoulder at hour eighteen.

What is Pandough?

Pandough is a flour-aware dough manager that builds a precise plan around your flour, your kitchen, your oven and your schedule. At its core is Farina Prima, the flour-first method: start with the bag you actually own, then adapt hydration, yeast and fermentation to how that flour behaves in your real baking conditions.
