Pandough

A pizza course that adapts to your kitchen.

Pandough Academy is more than an online course or a YouTube video. It is a system that adapts the lessons to your equipment and to the conditions in your kitchen: your flour, your oven, your day.

The best home pizza you have ever made

Beginner9 LessonsEnds in a real bake

From a dough you plan the day before to a pizza with a crisp base and a light rim, from whatever oven you have. For anyone who wants a pizza they can repeat.

What you will learn

  • Plan a dough for tonight or tomorrow and know when to start
  • Read a flour bag and choose a flour that fits your timing
  • Mix and ball a dough by hand, and tell when it is ready

Napoletana and advanced dough techniques

Intermediate9 LessonsEnds in a real bake

Preferments, high hydration, cold fermentation and a very hot oven. For bakers who already make good pizza and want a real Napoletana.

What you will learn

  • Choose between poolish and biga and fit either into your week
  • Handle a wet, high-hydration dough without fighting it
  • Plan a cold maturation of one to three days

Consistent dough in a pizzeria

For pizzerias9 LessonsEnds in a real bake

The same dough every day, whoever is on shift. Standards, batch scaling, production schedules, staff training and quality control.

What you will learn

  • Write one dough standard your team can follow
  • Scale it from expected covers to an exact batch
  • Build a production schedule around opening hours and busy days

The tools already work. The courses come next.

Pandough is built on Farina Prima, the flour-first method: you start from the flour you actually have, and the dough plan follows from it. A course would teach that method on the same tools bakers use today.

  • Dough calculator with a schedule

Grams, baker's percentages and a timeline from mixing to baking, with yeast set for your time and temperature.

    Open the calculator

  • Flour catalog

Data on real flours: W strength, protein, and how long each flour can mature.

    Browse flours

  • Oven and mixer catalogs

Pick the oven and the mixer you own. The plan accounts for their heat and for how much mixing warms the dough.

    See ovensSee mixers

  • Baking journal

Start a bake, follow it over hours or days, and keep a record of how it turned out.

  • A community of bakers

Bakers post their bakes with the dough plan attached, and others ask how they did it.

You can teach pizza. We have the tools for it.

The Academy has no teacher yet, and it should not start without one. We are looking for a pizzaiolo, a teacher or a school to build these courses with us, under your name.

What you bring

  • The craft: your dough, your technique, your standards
  • The teaching: how you explain it to someone doing it for the first time
  • The final say on the syllabus. Our drafts are a starting point.

What Pandough brings

  • A working platform: calculator, schedules, flour, oven and mixer catalogs
  • Guided bakes that adapt to each student's kitchen
  • Technical backend and translation into 13 languages
  • Bakers who already plan their bakes here

Questions

There is no date. A course starts once we have a teacher to build it with. If you are on its waitlist, you get one email when it does.
