Bosch Series 6 MUMS6ZS17 with scale

The Bosch MUMS6ZS17 is a household planetary mixer with a 5.5 L stainless steel bowl, a 1600 W air-cooled motor and seven speed settings. It adds an integrated scale with a 1 g display increment, a timer that stops mixing and seven sensor-controlled automatic programmes. Its yeast-dough programme combines kneading, resting and further kneading. Bosch specifies up to 2.5 kg of bread dough or 3.5 kg of cake batter. The selected package includes a dough hook, silicone-coated stirring whisk, beating whisk, pouring shield and glass blender attachment.

How the calculator uses this mixer

Water temperature. Pandough uses the typical friction factor for its type, 12. To reach 24°C dough in a 22°C kitchen, the calculator asks for water at 16°C, against 25°C when mixing by hand.
Batch size check. At 60% hydration, the calculator flags batches over 2.5 kg. For a 50% biga, the limit drops to 1.8 kg.
