How this oven bakes

  1. The shell holds heat. You still have to turn. The flame sits to one side, not over the pie.

  2. Give the deck the full 30 min. Air temperature lies. The stone is slower.

  3. If the base burns before the top is done, drop bottom heat or swap to biscotto.
