How this oven bakes

  1. Firebrick is slow to charge and slow to give it back. Do not chase a five-minute preheat.

  2. Give the deck the full 35 min. Air temperature lies. The stone is slower.

  3. If the base burns before the topping is ready, check the cooking surface with an infrared thermometer and let it cool before the next pizza. There is no separate bottom-heat control.

Specifications

200°C – 500°C
Inner size
80 cm × 60 cm
Weight
142 kg

Pros

  • 80x60 cm floor and a 63.8 cm mouth. Four pies, same class as Classico 4, with a glass door.
  • 18.5 kW. Matches Moderno 5 / Classico 4 burner class.
  • Designed to sit in an outdoor kitchen run. The arch is the point.
  • Hybrid Kit. Sequential wood.

Cons

  • 142 kg, no wheeled base. This is a built-in, not a cart.
  • Thin independent review corpus. Price is in Gozney Dome / Fontana territory with less public data.
  • Glass door plus 21.5 cm mouth still dumps heat if you work it like an open-mouth portable.
  • Needs a long peel. 60 cm depth is Classico 4's problem with more steel around it.

How the calculator uses this oven

  • Temperature and bake time. It reaches 500°C. At the default hydration, the calculator bakes Traditional Napoletana (60%) at 455°C on the deck for about 85 seconds, and Pizza Classica (65%) at 278°C on the deck for about 6 minutes.
  • Baking surface. The calculator assumes the stock cordierite stone. Swap in a biscotto and Traditional Napoletana takes about 90 seconds instead of 85 seconds.
  • Hydration for this oven. It reaches the heat Traditional Napoletana wants, so the calculator keeps the style's 58–65% hydration.
  • Baker corrections. Bake times learn from bakers' reports on this oven. A correction starts once at least 5 successful bakes from 3 different bakers share the same style and surface.
