The manual rates it for 56 lb of dough (about 25.4 kg) at 60% water-to-flour ratio. Its pizza chart allows 24.64 lb at 40% and 52.8 lb at 50%; high-gluten flour requires a 10% smaller batch. The minimum chart lists 4.4 lb of flour and 6.6 lb of dough (about 2.99 kg), while at least 30% capacity is recommended for best performance. Chart capacities assume 12% flour moisture and water at 70°F (about 21°C). Limit each batch to 10 minutes and rest the motor for 5–10 minutes between batches. The timer stops mixing, and the bowl guard must be closed for operation.
