The Bosch Series 8 MUMS8 is a planetary stand mixer with a 6 L bowl, 1800 W input power, seven speeds and a built-in scale and timer. Water temperature. Pandough uses the typical friction factor for its type, 12. To reach 24°C dough in a 22°C kitchen, the calculator asks for water at 16°C, against 25°C when mixing by hand.
Batch size check. At 60% hydration, the calculator flags batches over 2.8 kg. For a 50% biga, the limit drops to 2.0 kg.
