Giusto's Vita-Grain
An organic high-gluten flour (~13–14% protein) prized by West Coast bakers. Unbleached and malted, it yields doughs with excellent oven spring and crisp crust. Often used as a natural substitute for bromated flours in NY-style pizza and bagels. It produces a slightly more open crumb and a rich wheat flavor.
