Tomato sauce, prepared sardines, Parmesan, olives, oregano, garlic oil, fresh basil. Inspired by Cuddriruni all’Antica from the Sitàri menu in Agrigento.
Ingredients
Preparation
- 1
Use canned sardines, remove hard bones, and drain. For fresh sardines, remove bones and bake the fish until fully done before assembling the pizza.
Check the prepared sardines for bones and divide into small pieces. For fish, olives, and Parmesan, leave additional salt seasoning for the end.
- 2
Spread 80 g of the base ingredient: tomato sauce. Leave the rim free.
- 3
Before baking, arrange the weighed toppings: prepared sardines, Parmesan, olives, oregano.
- 4
Bake according to the temperature and time appropriate for your dough and oven, until the base is cooked through and the rim is browned.
- 1
Ingredients added after baking: garlic oil, fresh basil.
At Sitàri, this composition is listed as Cuddriruni all’Antica. The menu pairs fish with olives, oregano, and garlic oil. Hence this set on our pizza.
