VeggieWith a Twist

Plant-based pulled-pork alternative with impressive texture. Fun fact: Young (unripe) jackfruit has a stringy, meat-like texture when cooked—it absorbs BBQ sauce beautifully. Use canned jackfruit in water or brine (not syrup). Shred it with forks just like pulled pork. Rich in fiber, low in calories.

  1. 1

Use young canned jackfruit in water or brine. Drain it, shred it, and sauté it. Mix with part of the measured BBQ sauce, and leave the rest for the base. Slice the red onion into thin slivers.

  2. 2

Spread the remaining sauce on the stretched dough, leaving a free rim.

  3. 3

Spread the measured amount of mozzarella, shredded jackfruit, and red onion evenly on the base.

  4. 4

Bake at the temperature and time appropriate for your dough and oven, until the rims are well baked and the cheese melts.
