How the calculator uses this mixer

  • Water temperature. Pandough uses the typical friction factor for its type, 12. To reach 24°C dough in a 22°C kitchen, the calculator asks for water at 16°C, against 25°C when mixing by hand.
  • Batch size check. Its maker publishes no dough capacity, so there is no batch limit to check.

Formulas this mixer handles

The largest single batch for each formula at its own hydration. The limit is the same one the calculator checks your batch against.
