Rofco B20 pizza temperature and bake time
Pandough estimates a Neapolitan starting point at 60% hydration: 250°C air, 250°C on the baking surface, and about 8 min–11 min. These are model estimates for this oven, not manufacturer specifications.
The Rofco B20 is an electric bread oven with three 30 × 48 cm chamotte stone decks and a 6 kg dough capacity. It accommodates six 850 g loaves at once within a 37 cm wide cabinet. Two manual steam vents release moisture during baking. The thermostat reaches 250°C.
