Maxima MPM40

The Maxima MPM40 is a planetary mixer sold in the 40 L size class. Maxima lists a net bowl volume of 34 L. Its 1500 W electrical input and three speeds of 80, 160, 310 rpm support mixing with the included hook, flat beater and whisk. Maxima publishes a pizza-dough maximum of 20 kg and a bread-dough maximum of 16 kg. The bowl lifts into the working position and can be removed. Stop the machine before changing speed; the manual requires cooling pauses between mixing cycles.

Water temperature. Pandough uses the typical friction factor for its type, 12. To reach 24°C dough in a 22°C kitchen, the calculator asks for water at 16°C, against 25°C when mixing by hand.
Batch size check. Its maker publishes no dough capacity, so there is no batch limit to check.
