Estella EMIX8 / EMIX8G

The Estella EMIX8 / EMIX8G is a programmable bowl-lift planetary mixer with an 8 US qt stainless steel bowl (7.57 L) and five speed settings. The EMIX8G package includes the clear bowl guard; EMIX8 uses the same mixing platform with the guard optional. The manual limits pizza dough to 2 lb at 40% water-to-flour ratio, 3 lb at 50% and 4 lb at 60%, using the dough hook at speed 1. High-gluten flour requires a 10% smaller batch.

Teplota vody. Pandough používá typický faktor tření pro tento typ, 12. K dosažení těsta o teplotě 24°C v kuchyni s teplotou 22°C vyžaduje kalkulačka vodu o teplotě 16°C, oproti 25°C při ručním hnětení.
Kontrola velikosti dávky. Výrobce neuvádí kapacitu těsta, takže nelze zkontrolovat limit dávky.
