Rofco B10 pizza temperature and bake time
Pandough estimates a Neapolitan starting point at 60% hydration: 250°C air, 250°C on the baking surface, and about 8 min–11 min. These are model estimates for this oven, not manufacturer specifications.
The Rofco B10 puts two 30 × 48 cm chamotte stone decks in a cabinet 37 cm wide. Its 4 kg dough capacity accommodates four 850 g loaves at once. The stones store heat for bread baking, and one manual steam vent releases moisture. The thermostat reaches 250°C.
