Estella SM30

The Estella SM30 is a commercial spiral dough mixer with a fixed 30 US qt bowl (28.39 L), two hook speeds of 112 and 198 RPM, and a 120 V single-phase supply. The manual rates it for 42 lb of dough (about 19.1 kg) at 60% water-to-flour ratio. Its pizza chart allows 18.5 lb at 40% and 39.6 lb at 50%; high-gluten flour requires a 10% smaller batch. The minimum chart lists 3.3 lb of flour and 5 lb of dough (about 2.27 kg), while at least 30% capacity is recommended for best performance. Chart capacities assume 12% flour moisture and water at 70°F (about 21°C). Limit each batch to 10 minutes and rest the motor for 5–10 minutes between batches. The timer stops mixing, and the bowl guard must be closed for operation.

Pros

  • Two hook speeds separate initial mixing from faster kneading.
  • The timer stops the mixer when the selected time expires.
  • The guard interlock prevents mixing with the guard raised.

Cons

  • The bowl is fixed and must be cleaned in place.
  • Stiff dough requires a smaller batch, and the motor needs a rest between batches.

How the calculator uses this mixer

  • Water temperature. Pandough uses the typical friction factor for its type, 11. To reach 24°C dough in a 22°C kitchen, the calculator asks for water at 17°C, against 25°C when mixing by hand.
  • Batch size check. At 60% hydration, the calculator flags batches over 19 kg. For a 50% biga, the limit drops to 13.3 kg. Under 2.3 kg, it warns that the batch is too small.

Formulas this mixer handles

The largest single batch for each formula at its own hydration. The limit is the same one the calculator checks your batch against.
