Pizza Party Pizzone 4 pizza temperature and bake time
Pandough estimates a Neapolitan starting point at 60% hydration: 455°C air, 455°C on the baking surface, and about 75-100 sec. These are model estimates for this oven, not manufacturer specifications.
Pizza Party Pizzone 4 is an outdoor wood-fired oven with a 60 × 80 cm cooking floor. The manufacturer specifies a recommended maximum of 550°C. The oven weighs 63 kg with its standard refractory bricks installed. A stainless-steel chamber, AES insulation and rear chimney form a compact alternative to a built-in masonry oven.
- The 60 × 80 cm floor can accommodate three to four round pizzas, depending on their size.
- The optional Biscotto Saputo floor can replace the included refractory bricks.
- Wood firing and a rear chimney leave the front opening clear for loading and turning pizzas.
- At 63 kg with the floor installed, moving it takes planning and help.
- Wood firing requires tending the fire and checking the floor temperature; there is no thermostat.
- The stand and pizza peels are sold separately.
- Build the fire gradually and check the cooking floor with an infrared thermometer before loading pizza. Keep the fire and ash away from the pizza area.
