The Bernardi BT24s uses two diving arms in a 35 L bowl for bakery and pizzeria batches. Bernardi rates it for 3 to 24 kg of finished dough, separately from its 2 to 15 kg flour range. Five speed steps provide more control over the kneading pace. A mechanical timer is included, and the kneading arms can be removed for unloading and cleaning. The standard version uses a 400 V three-phase supply; a 230 V single-phase version is available on request. For egg pasta, Bernardi halves the maximum dough capacity.

  • Water temperature. Pandough uses the typical friction factor for its type, 11. To reach 24°C dough in a 22°C kitchen, the calculator asks for water at 17°C, against 25°C when mixing by hand.
  • Batch size check. At 60% hydration, the calculator flags batches over 24 kg. For a 50% biga, the limit drops to 16.8 kg. Under 3 kg, it warns that the batch is too small.
