The 12% protein provides reliable gluten for well-risen loaves.

Higher ash content than refined flours gives a slightly golden crumb with more wheat flavor and better nutrition. Excellent for Polish wheat bread, can be mixed with rye flour for chleb mieszany. The 12% protein provides reliable gluten for well-risen loaves. It ferments best over 2–6 hours at room temp (24°C). Type 750 bread flour with good gluten for direct dough method. Produces hearty Polish wheat bread with slightly darker crumb.
